We believe in letting the grapes speak. With minimal intervention in the cellar, our wines express the pure, vibrant flavors of fruit and earth that nature intended — nothing added to mask the vintage, nothing rushed to hurry it along.
That means low sulfites. Sulfites are preservatives most wineries add generously to stabilize and extend shelf life. We use only a small fraction. The result is a wine that tastes fresher and more alive — brighter fruit, cleaner aromas, and a finish that reflects the grape rather than the additive. For many people, it also means a gentler glass, with fewer of the headaches sometimes blamed on heavily sulfited wines.
Behind it all are two doctors. Dr. Roges and Dr. Montanez brought their scientific training to the barrel room — the same precision, patience, and respect for natural processes that guided their medical work. Winemaking, to them, is science in service of soul: careful measurement in pursuit of something you can only feel when you taste it.
